Never plan a vacation any further than where you’ll stay the first night. Ask the locals what they like to do or what they think is unique in the area. It won’t be in the travel brochures, so there won’t be any other tourists in your way. The most unique thing we stumbled across? The H.R. Gieger museum in the middle of a medieval fortress town in Switzerland (Gruyere). We had grilled cheese sandwiches and absinthe in a bar he designed, and actually got to meet him as he was arriving to dedicate an exhibition to a fellow artist.
