    We don’t cook this, but it doesn’t sound so bad! Yesterday I buyed fryed chicken in a restaurant, it was just rotting, horrible, I could only throw it into the wastepaper basket and my stomach turned seeing this!!

    Ingredients:

    1 medium eggplant, unpeeled, diced1 1/2 to 2 tablespoons olive oil1 cup chopped onion1 large bell pepper, diced1 clove garlic, finely minced2 slices bread1 teaspoon butter3 large eggs, lightly beaten1/2 teaspoon salt1/4 teaspoon ground black pepper1/2 teaspoon dried leaf thyme1/2 teaspoon dried leaf marjoram1 1/2 cups shredded sharp Cheddar cheese

    Preparation:Butter a 1 1/2-quart baking dish. Heat oven to 350°.

    Steam the diced eggplant just until tender, about 5 minutes.

    Heat oil in a large skillet over medium heat. Add the onion and bell pepper and saute, stirring, until onion is tender. Add the garlic and saute for about 2 minutes longer. Remove from heat.

    Spread bread slices with the butter and cut into cubes. Stir the eggplant and bread cubes into the onion mixture. Let the mixture cool slightly. Stir in the beaten eggs, salt, pepper, thyme, and marjoram. Stir in half of the shredded cheese. Spoon the mixture into the prepared baking dish and cover with the remaining cheese.

    Bake for 20 to 25 minutes, until lightly browned. Serve hot.

    Serves 4.

    Most people just don’t know how to prepare eggplant. Baked long and slow in a sauce, it’s delicious. Breaded and fried and served justlikethat on a plate, it’s gross. I don’t go in for all the salting and pressing…just make sure it’s thoroughly cooked.

    Those snowmen give my reaction to (overcooked) asparagus. Happily my batting average at being served (or making myself) asparagus I like has vastly improved these past few years.

    You are totally weird!! I have had it both ways and baked it tastes like baked shoe sole. Only way is dipped in egg, coated in flour and fried to a golden brown. It isn’’t sirloin steak but it beats tuna fish cassarole. Nice work on the snowmen, Calvin!

    These snowmen defy gravity. Look at the one farthest right. You try leaning heavy balls of snow that way without them toppling! And funny how there’s never any less snow on the ground! Calvin clearly has mad skills.

    IMO, the ONLY good dish made with eggplant (edit: you need small “Indian eggplant” for this one) is “Guti Vankhaya” (and it must be coastal version, not Telenganese). Not even my wife (who loves Indian eggplants in many more dishes) likes the large “American” ones — which are the only ones Calvin’s mum will even know at all.

    calvin is cool.i remember when i was a kid.if i came home from school and smelled liver and onions cooking,my brother and i hated liver so we were going to have cube steak and mom made extra cube for dads lunch the next day…i wish i could go back!

    I’m not sure if I’ve ever had eggplant. It’s one of those things I’m scared to try, based on past experience with that type of vegetable (the ones that are supposed to be good for you).

    Eggplant fried in a little bit of butter until golden brown I like. Tuna cassarole I can make, but what goes into eggplant cassarole?

     

    Everything in the refrigerator leftover from the past week or two that hasn’t been eaten yet perhaps?!?

    My m-in-l used to make a wonderful eggplant dip that everyone enjoyed. Baked the eggplant first and then mashed it with all the ingredients she used.

    An old eggplant is bitter and would turn anyone off. I ruined a batch of ratatouli with one, and still don’t know how to check in advance if it is a good one.

    Actually eggplant is very tasty if prepared properly. The recipe opuscroakus70 posted is similar toone of mine, but I add a can of diced tomatoes as well.

    Dad knows Calvin pretty good,to be able to tell its egg plant ,with all the things Calvin does not like.I buyed that.Of all the silly things I have heard correcting a friend over that gets a 0 in my book.
