    The reason I used NC (a state in which “Barbeccue” is a noun) is that around here, they say “we eat everythang but the squeal”! That’s terrifying in a way… all that’s left are the echoes of the screaming!!

    In Louisiana, those little piggies have more than just barbecue to fear. We have a tradition known as a cochon-de-lait.

    In the 70s I used to work on a hog farm part time in N.C. and payment was in food. As far as I am concerned they had the best roast pork, barbcue, and sausage I have ever eaten in my life. Sure ate good while I was there.

    I wonder what folks in Arkansas do? They can’t barbecue pigs, that’s their college mascot. I guess they stick to BBQ beef or possum.
