Not sure if sweet potatoes are the best option for this hash. I’d use yams. REAL African and Indian yams, not these orange pretenders seen in the Western world.

Sounds like a keeper! Sweet potatoes are loaded with beta-carotene and fiber, and delicious with savory spices like the sausage and garlic. Karl – your point could have been made a little less snidely – remember this is an international forum, and yams are not as readily available in some places. I’d be happy to try this recipe both ways, but for now, since the American sweet potato is what I have available, that is what I am going to use.

The only dish with either yams or sweet potatoes that I ever liked was King’s Arms Tavern sweet potatoes — probably because the dish was so heavy on cinnamon and nutmeg that it tasted more like pumpkin pie.
