PUMPKIN CUSTARD WITH SHERRY GINGER CREAM
2 cups canned pumpkin
1 cup packed light-brown sugar
1 tablespoon flour
1/4 teaspoon salt
1 teaspoon each ginger, cinnamon and nutmeg
2 tablespoons butter
1-1/2 cups milk (whole milk / 3% milk fat)
4 eggs, slightly beaten
1 cup heavy cream, whipped {also known as whipping cream (33 % milk fat cream)}
1 tablespoon sherry
1/4 cup chopped preserved ginger
In saucepan mix first 7 ingredients. Cook, stirring constantly, 5 minutes. Cool slightly; pour over eggs. Pour into well-buttered 1 1/2 quart casserole. Place in pan of hot water. Bake in moderate oven (350° F.) 1 hour, or until set. Combine remaining ingredients; serve on custard. Serves 6.
Notes from me:
Add the spices even if the canned pumkin says spiced.
The cooking for 5 minutes starts when the pumpkin mixture reaches a boil. Bring it to a boil just below a red hot element then lower the heat a bit.
Stirring constantly means just that. (Even while bringing to boil.)
“Cool slightly” remove the saucepan from the burner, put a lid on it and let it sit on a cake rack for 20 minutes. Stir before pouring over eggs. (This is so the eggs don’t cook before the custard is put in the oven.)
If a knife inserted in the centre of the custard comes out clean (It will be obvious if it’s not.) the custard is done. Check at the 1 hour mark and judge from there.
