    Cooking a Whole Salmon

    Measure salmon at the thickest part. Place on a large piece of greased heavy aluminum foil. Season cavity with salt and line with thin lemon slices. Sprinkle outside of salmon with salt, pepper and lemon juice or dry white wine. Dot with butter. Wrap tightly, using a double fold. Place package on a cookie sheet. Bake at 230°C
    (450°F). Allow 5 min (sic) precooking for heat to penetrate foil; then bake 5-7 min per cm thickness for fresh fish or 10 – 12 min per cm thickness for frozen fish or until flesh flakes easily*. Cool slightly and remove skin. Use cooking liquid to make a sauce.

    TEST FOR DONENESS

    Prod fish at the thickest part with a fork. When cooked, the flesh should be opaque and flake or separate easily.
    *DO NOT OVERCOOK


    Cream Sauce

    1/4 cup butter
    1/4 cup flour
    1 1/2 cups liquid (reserved salmon juice plus milk)
    Salt, pepper
    2 Tbsp chopped parsley

    Melt butter in a saucepan. Blend in flour, then gradually add liquid. Cook, stirring constantly until smooth and thickened. Season to taste with salt and pepper. Stir in parsley.

    I prefer the “Mariners” even though my hometown farm team, the “Syracuse Chiefs” are the farm team for the “Washington Nationals”.

    Can’t say I care much for salmon. I am fond of tuna, cod, halibut, and tilapia though.

    There are several schools of thought in the matter of fish farms….

    Some people have an ocean that they’re all kinda fishy, and there water be a law against them….
    especially when some countries waive proper inspection.
