    It’s not called popcorn shrimp, but that’s what this actually is.

    Fried Shrimp in Beer Batter

    2 eggs, separated 2
    3/4 cup all-purpose flour 175 ml
    3/4 cup beer 175 ml
    2 tbsp vegetable oil 25 ml
    1 lb large shrimp, peeled and deveined 500 g
    1/4 cup cornstarch 50 ml
    Vegetable oil
    1/2 cup ketchup 125 ml
    1/4 cup prepared horseradish 50 ml
    2 tbsp mayonnaise 25 ml

    Beat egg yolks, flour, beer and oil.
    In a separate bowl, beat egg whites to soft peaks; fold in to egg yolk mixture.
    Dredge shrimp in cornstarch, shaking off any excess, then dip in batter.
    Discard any excess cornstarch and batter.
    Deep-fry shrimp in oil (375°F or 190°C) for about 2 minutes, or until coating is golden brown and crispy.
    Remove to a strainer set over a drip bowl and drain off excess oil.
    Keep warm in a 200°F (100°C) oven while frying the remaining shrimp.
    Combine ketchup, horseradish and mayonnaise; serve with shrimp as a dip.
    Serves 4.

    I think her mother used to work at our local Denny’s.

    She once told me not to order the Captain’s Fish Platter cos it was all frozen fish,
    and it was only on the “Chef’s Specials” board cos everything in the freezer had thawed the day before.

    Another time I was with a friend who ordered a glass of milk, and it tasted a little sour….
    when we told that same waitress, she sat down at our table and sipped from his glass to taste it.
