Repeating my comment from “Speed Bump” of October the 18.Toasting pumpkin seeds is easy.
Wash them thoroughly under running lukewarm tap water and put them on paper towels or clean tea towels to rid the surfaces of water.
Then spread them evenly on a cookie sheet or metal tray, and toast them beginning at 250 degrees to 275 degrees for about an hour to dry them thoroughly. To prevent sticking, shake them every once in a while.
Turn on the broiler to brown them lightly, but keep an eye on them so they don’t char.
After cooling,salt them (or not). Store them in a lidded jar or cookie tin.
